Queso Fundido & Ground Beef
with Cilantro Cauliflower Rice & Roasted Peppers
Translating to “melted cheese,“ queso fundido is a classic Mexican party appetizer typically made of two components: bubbling-hot cheese and savory spiced meat sauce. In our main-course riff, ground beef is loaded up with chili powder, garlic, and cumin and served with tender cilantro cauliflower “rice.“ A pool of molten queso—scratch-made with cream cheese, cheddar, Monterey Jack, and green chiles—is at the ready for drizzling and dunking.
