Chile-Spiced Pork Chop
with Kidney Bean-Corn Salad, Roasted Carrots & Potatoes
This dish packs some serious heat! To make it, pork chops are marinated with a housemade cajun rub and grilled to juicy perfection. To provide a cooling contrast, there’s a creamy side sauce made with vegan mayo, sour cream, hot sauce, and creamed honey. Because no spiced pork chop would be complete without a salad, there’s an accompanying salad starring corn, kidney beans, and tons of herbs.
Ingredients: pork chop, red potatoes, carrots, tomatoes, yellow sweet corn, dark red kidney beans (dark red kidney beans, water, salt, calcium chloride (a firming agent) and/or disodium edta (to promote color retention)), avocado oil mayonnaise (avocado oil, certified humane free range egg yolks, water, distilled vinegar, salt, lime juice concentrate, mustard flour, mustard extract, black pepper, lime oil), olive oil, red onions, sour cream (cultured cream), garlic, spicy cajun seasoning (paprika, granulated garlic, black pepper, granulated onion, ancho chile powder, smoked paprika, white pepper, cayenne pepper, oregano), honey, roasted garlic oil (olive oil, garlic), hot sauce (peppers, distilled vinegar, salt), sea salt, parsley, cajun seasoning (paprika, granulated garlic, black pepper, granulated onion, chili powder, white pepper, oregano), lime juice, apple cider vinegar, black pepper, dried basil, cayenne pepper
